Green blades (or garlic scapes) sprout from older garlic bulbs. While some people find garlic scapes to be bitter, others find the garlic flavor a good addition to stir fry or other cooked dishes. Toss them in dishes as you would chives. Garlic sprouts can also be grown from seed; these appear similar to alfalfa sprouts and also have a mild garlic flavor. Garlic sprouts are generally a bit more expensive because they cost more to grow.
