Commodity Overview

Shaped like an elongated sweet potato, yuca has pink to brown rough skin and dense, softly fibrous, white flesh. Yuca is also called cassava. It cannot be eaten raw. Careful preparation is necessary because improperly prepared yucca root can release cyanide. The vegetable can be used similarly to potatoes —fry, boil, mash or steam. It is available year-round.
