Winter melons are large, green melons resembling honeydew with waxy white skin that can weigh up to 30 pounds. Its white flesh tastes similar to bland zucchini, and it must be cooked briefly. Add to soups and stews, or cook the melon by steaming, simmering or parboiling. It has many different Chinese names, including dong qua and dong gua. Winter melons are available year-round in Chinese markets, peaking in winter.
