Tofu is the curd of soybeans. It is pure white with a cheesy texture and bland flavor that blends well with vegetables and sauces. Prepare it by squeezing out the moisture and using as you would eggs. Pasteurized product should be code-dated and stored at temperatures of 34 to 36 F, 1 to 2 C. Aseptically packaged tofu does not require refrigeration and has a 10-month shelf life.
