Resembling butternut squash but longer, the tahitian has a deep orange flesh with high sugar content. It can be eaten raw like a melon or cooked like a squash -- it tastes similar to sweet potatoes. Tahitian squash can be baked, fried, steamed or roasted. It keeps for a long period of time. It is available August through November.
