This green succulent is a small plant that resembles baby aloe jointed together, or it sometimes looks like birds’ feet. It is crunchy and salty and is also known as sea asparagus or sea beans. The beans can be eaten raw or blanched and added to salads or stir fry. Use them in applications that call for waxed beans, keeping in mind that they're already salty. They pair well with seafood. Salicornia is available summer and fall.
