This open-headed leafy vegetable is closely related to kale and cabbage but should not be confused with flowering kale, which is used mostly as an ornamental. Each salad savoy head has green fringe leaves with white and violet centers. Its flavor resembles cabbage, cauliflower and broccoli. Salad savoy can be steamed, stir-fried, boiled and eaten as a salad or used as a garnish. It is available year-round.
