Prickly pears are egg-shaped fruits that have a stiff rind covered with spines. The fruit color ranges from yellow-green to orange to red. They have a sweet flavor similar to watermelon. The sweet flesh is often pureed and used to make sauces, dressings, preserves or drinks. They are also called cactus pear and tunas and are available year-round from California, Mexico and Chile.
