Epazote has a unique pungent flavor and strong, camphor-like aroma. The chewy, jagged leaves taste bitter (some say they have a hint of citrus) and can be used as an herb in sauces and soups. It should be used sparingly because of its strong flavor. A staple of Mexican cuisine, it is available year-round.
