Dark green and heavily ridged, Chinese okra is about 1 inch in diameter and is best if picked when it is young, about 6-8 inches in length. Flavored like zucchini, Chinese okra can taste bitter as it matures. It has a spongy white flesh if picked young. Use it as you would green okra--deep fried, sliced and sauteed, or in stir fry. It is available year-round.
