Similar in shape to a pear, the chayote can range from almost smooth-skinned to deeply ridged and from cream to apple-green in color. The flesh is crisp and pale with a taste that blends cucumber, zucchini and kohlrabi. It is also known as the vegetable pear. It is available year-round with peak supplies fall to late spring.
