Boniato is a sweet potato with pink, purple, cream or red skin. Its white flesh is fluffier and nuttier than traditional sweet potatoes, so it can be used any way that sweet potatoes are used, however, the flavor is not as sweet. Boniato is as versatile as a potato: it can be mashed, fried, baked, steamed or roasted. Tubers can grow to be 8-12 inches long. It is also known as batat and sweet Cuban potato. It is available year-round from Southern Florida.
