Ghost peppers are small, about 2-3 inches long and half an inch wide, and can be green, orange or red, with shiny, somewhat wrinkled-looking skins. They're intensely spicy, at more than 1 million Scoville units, and are also known as Bhut Jolokia or Naga Jolokia. Their seeds and flesh both are spicy, and cooking does not diminish their heat.
