Fresno chilies have a conical shape similar to jalapenos, but with broader shoulders. They have glossy, waxy skin and a flavor and heat similar to a jalapeno when raw; when cooked, they have a smoky flavor. They can be green, orange or red. Red peppers are about 2,500 to 8,000 Scoville units, and orange are about 2,500 to 10,000.
