The lemon cucumber has a more delicate flavor without some of the bitterness associated with regular cucumbers. It is the size and shape of a tennis ball. It turns from lemon to golden-yellow as it matures and is covered in tiny soft, edible hairs or bristles. It is available from California, from late May through mid-July.
