Green heading chicory has leaves that wrap around a central head, which can be round or oblong. Center leaves are usually pale in color and outer leaves showcase darker green. It is a bitter green with leaves that can range from delicate to crisp. It is most often served raw in salads, but because of its strong flavor and hearty nature, it also can be wilted or cooked and served as a side dish. Chicory is available year-round from Europe.
