Green loose-leaf is the largest group in the chicory family. Some varieties have thick, curly leaves, while others have thin, flat ones. It is a bitter green that is most often served raw in salads, but because of its strong flavor and hearty nature, it also can be wilted or cooked and served as a side dish. It is available year-round. Also known as radichetta and green chicory.
