Baby broccoli is actually "sprouting" broccoli, not broccolini, as some consumers may think. It is picked while the plant is still immature, resulting in small, tight florets and straight stalks that are more tender than their conventional counterparts. The vegetable has a milder taste than regular broccoli and can be eaten raw or cooked a variety of ways. (True broccolini a cross between traditional broccoli and Chinese broccoli.)
