Allow me to share a personal story. I’ve been working over the last few months to change my eating habits, and more fresh produce has been a significant part of those efforts. As we all know, however, protein is vital to keeping that “comfortably full” feeling between meals, so I have a new staple in my diet – a chicken burger made with mushrooms, eggplant and garlic.
Believe it or not, it tastes great, and freezing the burgers and reheating them later has been my go-to lunch solution for a number of weeks now as I, like many other folks, continue to work from home.
I make a double batch of these about every two weeks, so I use two eggplants, 24 ounces of mushrooms and eight cloves of garlic – I upped the amount of garlic from the original recipe (from the WW app) and loved how it turned out. Soy sauce, salt and pepper are the only other ingredients.
It’s not a difficult recipe to make, but talk about a basket builder! Before I discovered this burger, I’d never bought an eggplant in my life, and I wasn’t a regular mushroom consumer either.
I know I’m not the only one who’s taken a new interest in getting my health in order over the past year. The trend around health and wellness was burgeoning long before the pandemic.
