A root vegetable, water chestnuts look like a dirty, small tulip bulb with a brownish-black coat, leafy scales and crisp, white flesh. They have a refreshing, mild taste and good crunch, making them a natural addition to stir fries or Asian dishes (they stay crisp even when cooked). To extend display life, do not wash dirty product before placing in refrigerated cases. Water chestnuts are available year-round from China and Pacific Rim countries, although quantities are irregular.
