Lychees are about 1 inch in diameter with a thin, rose-colored, bumpy outer shell, a clear, sweet pulp and large, hard, inedible seed. The flesh slips from the shell like a hard-cooked egg and has a flavor similar to grapes with a touch of cherry. The fruit is good raw and incorporated into drinks or desserts. Lychees are available from late spring to mid-summer from Florida, and they can be found in season (3-4 months) internationally, making them available year-round if sourcing from a variety of markets.
