Ginger root is a knobby, fibrous root with light brown, smooth skin that has a light sheen and white flesh. The flesh imparts a spicy, citrus taste, making the herb useful in a variety of ways. Ginger gets spicier as it ages, so more mature roots have a stronger flavor. Ginger root can be used in marinades, sauces and dressings or teas and smoothies. It should be peeled before it's eaten. It is available year-round from Fiji, Costa Rica, Taiwan, the Philippines, Hawaii, Indonesia and Brazil.
