Chicory is a bitter green that comes in various forms, from loose leaf that ranges from 6 inches to 1 foot long to head varieties that can be 2 to 6 inches in diameter. Pale inner leaves indicate freshness. It is most often served raw in salads, but because of its hearty nature, it also can be wilted or cooked. Chicory is available year-round from Europe.
