Whole Foods "produce butcher" offers prep tips

Austin, Texas-based Whole Foods Market Inc. is one of the latest retailers to add a “Produce Butcher” to in-store services at select stores.

The company published a new blog post with tips from Emily Hankey, the produce butcher at its Bryant Park store in New York City.

Hankey learned her trade at the French Culinary Institute, and says that her job brings unique challenges.

“The reality is that I don't just prep fruits and veggies for people, I also give lots of tips on how to make plants the star of their meal rather than just a side dish.”

“We sell so many cool varieties of produce that it's common for someone to come up to me, holding a banan flower with this confused look on their face, asking me how they are possibly supposed to cook it. I love that I'm helping them feel more confident in the kitchen.”

Hankey offered food prep tips for three spring favorites, including artichokes, sugar snap peas and leeks.
