Get ready to carve some…pineapples?

The National Watermelon Promotion Board had some fun promotions encouraging consumers to “Save a Pumpkin, Carve a Watermelon” a few years back. I've also seen ideas to make stuffed bell pepper jack-o-lantern style, which turn out truly ghoulish when cooked – especially if cheese bubbles out the mouth and eyeballs.

And did you know the original jack-o-lanterns were potatoes and turnips, tracing their history back to an Irish superstition

But now?

Guys, seriously. Pineapples are everywhere!

Now we're talking about carving jack-o-lanterns, or is it pine-o-lanterns?

I've seen several stories over the past few days encouraging consumers to carve pineapples instead of pumpkins this year.

 

Instagram is littered with carved pineapples. Here's just one recent post.

I mean, if you pick one up at a $1 pineapple sale like Harp's had last week, then you're getting a great deal.

I have to laugh at this, though, because it's making me feel like a serious trendsetter. See, waaaaaay back in 2003, when I got married, I had a South Pacific “themed” wedding (ok, it was my excuse to wear hot pink Converse Allstars at my wedding, and my husband wanted to wear an Aloha shirt).

My sister made lantern centerpieces out of the pineapples we cut up for the fruit tray.
