While only 17% of Fresh Trends 2017 consumers said they bought kale in the past 12 months, the vegetable has a loyal following.
According to the U.S. Department of Agriculture's Retail Report, kale was on ad in an average of 2,366 stores per week in 2016, an increase of 357% from five years prior. That's despite a 10% increase in average advertised price.
Organic kale also is popular among consumers. It's the No. 1 item consumers prefer to buy both exclusively and occasionally organic, according to Fresh Trends.
